DOUBLE FERMENTATION FOR A 100% NATURAL RESULT
To obtain a real Kombucha, unpasteurized and not carbonated, one element is essential: a complete double fermentation. If it takes time (7 to 14 days), this process remains a 100% natural choice. This is why L’Eau à la Bouche’s drinks are certified 100% vegan and organic, but also labeled by the Valeurs Parc Naturel Régional brand. The first fermentation takes place in a tank. Over a period of between 7 and 14 days, it is renewed several times using sugar and spring water. The sugar will then be transformed into alcohol which will produce other acids which are good for health. Then comes the time for flavoring with several possible natural flavors. After bottling, another fermentation is set up to refine and refine the bubbles.
AN ARTISANAL WORKSHOP
The producer Justin prepares his Kombucha in his artisan workshop in Rimont. Equipped with tanks for fermentation, the space brings together the essential ingredients for production: tea, sugar, spring water, mother of Kombucha. If an extension of the workshop is planned to increase production, the current workshop shows good productivity, as evidenced by the 2000 bottles produced each week.
THE ORIGIN OF THE TEA
